  • 2 pieces Lemons (Zest and Juice)
  • ½ cup Chicken Broth
  • 1 tsp Onion Powder
  • 1 tbsp Cornstarch
  • 1 tbsp Water

Preparation

  • Start by preparing the chicken. Season 2 pounds of boneless, skinless chicken breasts or thighs with salt and black pepper, ensuring all sides are evenly coated.
  • Place the chicken into the slow cooker, arranging it in a single layer for even cooking.

Mixing the Sauce

  • In a mixing bowl, combine ½ cup of melted unsalted butter with 4 minced garlic cloves, the zest and juice of 2 lemons, 1 teaspoon of dried oregano, ½ cup of chicken broth, and 1 teaspoon of onion powder.
  • Whisk these ingredients together until well blended; the mixture should be smooth and fragrant.

Cooking

  • Pour the butter and lemon mixture over the chicken in the slow cooker, ensuring the chicken is thoroughly coated.
  • Cover the slow cooker with the lid and cook on low for 6 to 7 hours, or on high for about 4 hours.
  • Check for doneness; the chicken should be tender and cooked through.

Thickening the Sauce

  • Once the chicken is done, remove it from the slow cooker and place it on a cutting board.
  • In a small bowl, mix 1 tablespoon of cornstarch with 1 tablespoon of water until smooth.
  • Pour the cooking liquid from the slow cooker into a saucepan over medium heat.
  • Stir in the cornstarch mixture, cooking until the sauce thickens to a desirable consistency.

Serving

  • Slice or shred the chicken as preferred, returning it to the slow cooker with the thickened sauce.
  • Toss gently so that the chicken is well combined with the sauce.
  • To serve, spoon the lemon garlic butter chicken onto plates and garnish with freshly chopped parsley.
