Ingredients
  

For the filling

  • 2 cups cooked chicken (shredded or chopped) Use rotisserie chicken for convenience.
  • 1 cup corn (drained and rinsed) Canned corn works well.
  • 1 cup black beans (drained and rinsed) Make sure to rinse well to remove excess salt.
  • 1 cup spinach (chopped) Fresh spinach preferred.
  • 1 cup diced red bell pepper For added sweetness and color.
  • 1/4 cup diced jalapeno (de-seeded) Adjust for spice preference.
  • 1/2 tablespoon cumin Adds warmth to the filling.
  • 1/2 tablespoon chili powder Adds flavor complexity.
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups Monterey jack cheese Grated or shredded.
  • 1 package egg roll wrappers (20 egg roll wrappers)

Instructions
 

Preparation

  • In a large mixing bowl, combine the cooked chicken, corn, black beans, chopped spinach, diced red bell pepper, and jalapeno. Stir everything together until well mixed.
  • Add the spices—cumin, chili powder, salt, and black pepper—into the mixture. Stir in the shredded Monterey jack cheese until everything is thoroughly combined.

Rolling the Egg Rolls

  • Lay an egg roll wrapper on a clean surface with one point facing you. Add 2 to 3 tablespoons of the filling into the center of the wrapper.
  • Fold the bottom corner of the wrapper up over the filling, then fold in the side corners. Roll the wrapper tightly towards the top corner, ensuring it's snug but not overly tight.
  • Dip your finger in a small bowl of water and run it along the edges to seal. Place the sealed egg roll on a baking sheet.
  • Repeat until all filling and wrappers are used.

Cooking

  • You can either fry or bake the egg rolls. If frying, make sure to preheat the oil. If baking, preheat the oven and lightly brush the egg rolls with oil before placing them in.

Notes

Serve with salsa or guacamole for dipping. These egg rolls can be made ahead of time and frozen before cooking for a quick meal option.
