Ingredients
  

For the chicken

  • 1 lb boneless, skinless chicken breasts
  • to taste Kosher salt Kosher salt, to season water + to taste
  • to taste black pepper black pepper, to taste

For the dressing

  • 3/4 cup plain full-fat Greek yogurt (or skyr) Using full-fat for best texture
  • 1 large lime, juiced (about 2–3 Tbsp) Fresh lime juice enhances flavor
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/8–1/4 tsp cayenne (optional, to taste) Adjust based on heat preference

For the salad

  • 1 cup diced red bell pepper (about 1 medium pepper)
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn (fire-roasted, thawed, canned drained, or grilled)
  • 1/4 cup finely diced red onion (or shallot)
  • 1/4 cup chopped cilantro (optional)

Preparation

  • Start by bringing a large pot of water to a gentle boil. Season the water with kosher salt to enhance the chicken's flavor during cooking.
  • Once the water is boiling, add the boneless, skinless chicken breasts carefully. Cook the chicken until it is fully cooked, checking that it is opaque with no pink remaining.
  • Remove the cooked chicken from the pot and allow it to rest for a few minutes.
  • While the chicken is resting, prepare the dressing by combining Greek yogurt, lime juice, chili powder, ground cumin, smoked paprika, and optional cayenne in a mixing bowl. Mix until smooth.
  • Dice the rested chicken into bite-sized pieces.

Assembly

  • In the mixing bowl with the dressing, add diced red bell pepper, black beans, corn, finely diced red onion, and chopped cilantro.
  • Gently fold in the diced chicken until fully coated and combined with the vegetables.
  • Taste and adjust seasoning with additional kosher salt and black pepper if desired.

Notes

Allow the chicken to rest after cooking to enhance moisture and flavor. Use fresh lime juice for a brighter taste in the dressing. Consider grilling the chicken for added smokiness.
