For the Chicken Marinade

  • 1 whole lime juiced and zested adds acidity and zest

Instructions
 

Preparation

  • In a large bowl or a gallon-sized zip lock bag, combine the lime juice and zest, garlic powder, cumin, chili powder, salt, honey, and avocado oil to create the chicken marinade.
  • Add the chicken breasts to the marinade, ensuring they are thoroughly coated, and refrigerate for a minimum of 8 hours, ideally up to 24 hours.

Cooking the Chicken

  • Spray a grill pan with cooking spray and heat it over medium heat.
  • Add marinated chicken breasts to the pan and cook for about 5-6 minutes without moving them to obtain a good sear.
  • Flip the chicken and cook the other side for an additional 5-6 minutes, checking that the chicken is no longer pink in the center. Once cooked through, set aside to cool before slicing.

Dressing & Assembly

  • Prepare the spicy ranch dressing by combining ranch dressing and hot sauce in a small bowl.
  • Layer the chopped green leaf lettuce in a large bowl, followed by the sliced chicken, diced tomatoes, black beans, sliced red bell pepper, avocado, corn, and red onion.
  • Sprinkle tortilla strips on top for added crunch, then garnish with fresh cilantro and lime juice.
  • Drizzle the spicy ranch dressing over the salad just before serving.

Notes

For best results, marinate the chicken overnight for enhanced flavor. Adjust hot sauce quantity to control dressing spiciness and consider adding fresh herbs for an elevated taste.
