Ingredients
  

Vegetable Base

  • 4 cups Coleslaw Mix For freshness and crunch
  • 2 teaspoons Olive Oil For cooking the veggies

Main Ingredients

  • 1 pound Ground Chicken Breast Quick-cooking protein
  • 3 tablespoons Honey For sweetness
  • 2 tablespoons Chili Garlic Sauce or Sriracha For heat and flavor
  • 2 tablespoons Coconut Aminos or low sodium soy sauce For umami flavor
  • 2 tablespoons Chinese Black Vinegar or balsamic vinegar For acidity
  • 2 cubes Frozen Crushed Ginger or 2 teaspoons freshly crushed ginger For a zingy flavor
  • ΒΌ cup Water To combine sauce
  • 2 packs Trader Joe's Squiggly Knife Cut Style Noodles or other instant ramen For the noodle base
  • to taste Chives or Scallions and Toasted Sesame Seeds For garnishing

Instructions
 

Preparation

  • Bring a pot of water to a boil for the noodles. Heat a large nonstick pan with olive oil over medium heat until it shimmers.
  • Add the coleslaw mix to the pan, stirring gently. Season with a pinch of salt and cook until tender-crisp, about 3-4 minutes.

Cooking Chicken

  • Transfer the cooked coleslaw to a bowl and set aside. In the same pan, add ground chicken, spread it evenly, and cook until golden brown, about 4 minutes.
  • Break apart the chicken with a spatula until fully cooked.

Sauce Preparation

  • Add honey, chili garlic sauce, coconut aminos, vinegar, ginger, and water to the pan with chicken. Stir well and cook until the sauce reduces and caramelizes, about 3-4 minutes.

Cooking Noodles

  • Cook the noodles according to package instructions. Reserve about half a cup of the noodle cooking water before draining.

Combining and Serving

  • Combine drained noodles with the sauce and chicken mixture in the pot along with reserved noodle water as needed.
  • Serve garnished with sliced green onions or chives and toasted sesame seeds.

Notes

Adjust the amount of chili garlic sauce based on spice preference. Leftovers can be stored in the fridge for 3-4 days. Reheat before serving.
