Ingredients
  

For the Chicken

  • 4 pieces boneless skinless chicken thighs
  • 1/2 cup sweet chili sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil

For the Rice and Toppings

  • 1 cup jasmine rice
  • 1 cup coconut milk
  • 2 tablespoons fresh lime juice
  • 1 cup diced fresh tomatoes
  • 1/4 cup chopped green onions or chives
  • Salt and pepper to taste
  • Optional: sesame seeds, lime wedges

Instructions
 

Preparation

  • Marinate the chicken thighs in a mixture of sweet chili sauce and soy sauce for added moisture and flavor.
  • In a medium saucepan, bring water to a boil and add the jasmine rice. Cover and cook until tender.

Cooking

  • Heat olive oil in a large skillet over medium heat. Add marinated chicken thighs and cook until browned and cooked through.
  • Combine coconut milk and fresh lime juice in a small bowl; set aside.
  • Remove cooked chicken and let it rest. Sauté diced tomatoes and chopped green onions in the same skillet briefly.

Serving

  • Spoon jasmine rice into bowls, top with sautéed tomatoes and green onions, slice the chicken, and drizzle with the coconut lime mixture.
  • Garnish with sesame seeds or lime wedges if desired.

Notes

Store leftovers in airtight containers; reheat before serving. Adjust chili sauce to taste and consider marinating longer for enhanced flavor.
