Ingredients
  

For the marinade

  • 1/4 cup olive oil
  • 2 pieces lemons, juiced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Main ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1/2 cup crumbled feta cheese for topping
  • Fresh parsley for garnish

Instructions
 

Preparation

  • In a mixing bowl, combine olive oil, freshly squeezed lemon juice, minced garlic, dried oregano, and a sprinkle of salt and pepper. Whisk until blended.
  • Place chicken breasts in a large resealable plastic bag or shallow dish and pour marinade over them. Seal or cover and marinate in the refrigerator for at least 30 minutes.

Cooking

  • Preheat the grill or grill pan over medium-high heat, cleaning and lightly oiling the grates to prevent sticking.
  • Remove the chicken from the marinade, allowing excess to drip off. Place on the grill and cook for approximately 6-8 minutes per side until cooked through.
  • Sprinkle the crumbled feta cheese on top of the chicken when it's nearly done. Cover the grill for the last minute to allow the cheese to melt slightly.

Resting & Serving

  • Once cooked, remove chicken from the grill and let it rest on a cutting board for a few minutes before slicing.
  • Garnish with fresh parsley before serving.

Notes

For a more intense lemon flavor, zest the lemons before juicing. Consider saving extra marinade as a dressing for side salads. Allowing the chicken to marinate overnight can enhance flavor.
