For the Chicken and Wraps

  • 1 lb boneless chicken breast, cut into strips provides lean protein

For the Fresh Vegetables

Instructions
 

Preparation

  • In a skillet over medium heat, add the chicken strips and cook until they are no longer pink in the center, about 5-7 minutes, stirring occasionally.
  • In a mixing bowl, combine the peanut butter, soy sauce, sesame oil, lime juice, honey, garlic, and ginger. Whisk until smooth and well combined.
  • Remove the cooked chicken from heat and set aside to cool for a couple of minutes.
  • Wash and chop the fresh vegetables: tear lettuce, shred cabbage, julienne carrots, and chop cilantro.

Assembly

  • Lay a flour tortilla flat on a plate. Place a portion of the cooked chicken in the center, followed by the fresh vegetables and peanut sauce.
  • Fold in the sides of the tortilla, then roll it up from the bottom, enclosing the filling snugly.
  • Repeat for the remaining tortillas, placing them seam-side down on a serving plate.
  • Drizzle with any remaining peanut sauce before serving.

Notes

Use fresh vegetables for the best texture. Consider marinating the chicken for extra flavor. Store leftovers tightly wrapped to maintain freshness.
