Turkey Tostadas

Ingredients
  

For the Turkey Mixture

  • 1 lb ground white turkey
  • 1 T coconut oil
  • 1 T cumin
  • 1.5 tsp paprika
  • 1.5 tsp chili powder
  • 1 tsp garlic powder
  • 0.5 tsp dry cilantro or 1 tablespoon of fresh cilantro
  • 0.5 tsp salt
  • 0.25 tsp pepper
  • 1 15oz can black beans (no salt added, drained and rinsed)

For Assembly

  • 10 pieces corn tortillas
  • 1 cup Mexican cheese (optional)
  • 2 pieces roma tomatoes, diced
  • 3 pieces avocados, diced
  • 2 cups spinach, chopped into smaller pieces
  • 2 pieces limes, cut into wedges

Instructions
 

Preparation

  • Start by heating your medium-sized skillet over medium-high heat.
  • Add the coconut oil and let it melt until glossy.
  • Add ground turkey to the skillet and break it apart with a spatula, stirring occasionally until uniformly browned.
  • Sprinkle in the cumin, paprika, chili powder, garlic powder, cilantro, salt, and pepper once turkey is cooked.
  • Rinse and drain the black beans, then gently fold them into the turkey mixture.

Assembly

  • Preheat your oven broiler to high.
  • Arrange corn tortillas on a cookie sheet and add about 1/4 cup of turkey mixture on each.
  • If using cheese, sprinkle a tablespoon on each tortilla.
  • Place the cookie sheet under the broiler, watching closely for about 5 minutes until tortillas are golden and crisp.
  • Once out of the oven, top each tostada with chopped spinach, diced tomatoes, and diced avocados.
  • Add lime wedges for squeezing over the tostadas just before eating.

Notes

These tostadas are great on their own or served with a light salad. Keep toppings separate if storing leftovers to avoid sogginess.
