White Chicken Chili

Ingredients
  

For the base

  • 1 small small yellow onion, diced
  • 1 tbsp olive oil
  • 2 cloves garlic, finely minced
  • 2 cans low-sodium chicken broth (14.5 oz each)
  • 1 can diced green chilies (7 oz)

For the seasoning

  • 1.5 tsp cumin
  • 0.5 tsp paprika
  • 0.5 tsp dried oregano
  • 0.5 tsp ground coriander
  • 0.25 tsp cayenne pepper
  • to taste Salt and freshly ground black pepper

For the chili

  • 8 oz Neufchatel cheese, softened
  • 1.25 cups frozen or fresh corn No need to thaw if using frozen
  • 2 cans cannellini beans (15 oz each) Rinse and drain
  • 2.5 cups shredded cooked rotisserie or leftover chicken Let sit at room temperature before adding
  • 1 tbsp fresh lime juice Add before serving
  • 2 tbsp chopped fresh cilantro, plus more for serving
  • to taste Tortilla chips or strips For serving
  • to taste Monterey Jack cheese For serving
  • to taste Sliced avocado for serving (optional)

Instructions
 

Preparation

  • Heat olive oil in a large pot over medium-high heat. Add the diced onion and sauté for about four minutes until soft and translucent.
  • Add minced garlic and stir for another thirty seconds until fragrant.

Cooking

  • Pour in the chicken broth and add diced green chilies. Sprinkle cumin, paprika, oregano, coriander, cayenne pepper, and season with salt and pepper to taste.
  • Bring the mixture to a boil, then reduce heat to medium-low and let it simmer for about fifteen minutes.
  • While simmering, drain and rinse the cannellini beans. Measure out one cup to keep whole, and puree the remaining cup with a quarter cup of broth in a food processor until nearly smooth.
  • Return to the pot, add softened Neufchatel cheese, corn, whole beans, and the pureed bean mixture. Stir and let simmer for 5-10 minutes until the cheese is melted.
  • Stir in shredded chicken, fresh lime juice, and chopped cilantro. Serve topped with Monterey Jack cheese, more cilantro, avocado slices, and tortilla chips if desired.

Notes

Use a rotisserie chicken for convenience. Taste as you go and adjust the seasoning as needed.
